Feed your brew ½ a gallon of sweet tea every 2-4 months. This will keep your SCOBY and starter liquid strong until you’re ready to brew again. Remove the cover, pour in fresh sweet tea, (make sure it has cooled) give it a stir and switch back to your cloth cover. After two weeks switch the cloth cover back to the plastic cover.

When it comes to starting your kombucha home brew there a few essential things you need: a couple supplies, a really good set of instructions, and most importantly, a SCOBY and starter liquid from a trusted source.

In each batch brew, the mother culture grows a new baby SCOBY on the top of your brew jar each time your brew. As you continuing to brew, you’ll find yourself with a whole bunch of SCOBYs. We don’t recommend leaving too many SCOBYs in your brew as it will start to make your kombucha taste vinegary before your brew has had time to properly ferment.

If you are away for only a few days past your normal F1 fermentation time, give your brew a taste, it might be a little more sour than usual, but still perfectly safe and will be sure to make some extra fizzy kombucha.
