So, yes bread yeast can be used to convert sugars to alcohol. The drawback to using bread yeast is it has not been cultivated to withstand fermentation conditions in the same way brewer’s yeast has.

Bread yeasts are low alcohol tolerant varieties, made to help bread rise. It does that by taking a little sugar and starch and converting it into alcohol (that’s what yeast and sugar always do). In that process, carbon dioxide bubbles are produced which are trapped in the dough, helping it to rise.

Although bread yeasts will have no trouble fermenting alcohol up to 8%, they will struggle beyond this level and stop at around 10%. This is enough for beer but is largely inadequate for wine. What does yeast do?
