Why does cold-brew coffee have carbs, and should I worry about it on keto? I've noticed that Stok cold-brew and Starbucks iced coffee (both unsweetened) list 2g carbs per serving. I've never counted black coffee carbs on my diet, and I can't find online why these coffee products have carbs at all.

Because it is less than 1g of carbs, companies can claim 0 carbs. It is better to count it as 1 because for all you know it's 0.9g carbs not 0.4. And that's for 2T of heavy cream, so depending on how much heavy cream you are using or is in a bottled drink, that would obviously make the carbs go up.
