Many Mormons aren’t sure why the church forbids hot beverages because they are allowed to drink caffeinated soft drinks. It has long been assumed that because tea and coffee contain caffeine (which is addictive), that was the reason for avoidance. However, it seems that many Mormons follow what the health code advises without questioning why.

The "Word of Wisdom" actually doesn't mention coffee by name. Instead, it talks generally about avoiding "hot drinks." Through additional messages given by God, Mormons have learned that "hot drinks" refer to coffee and black tea. Herbal teas are okay, unless they are made from the same plant as black tea. Mild barley drinks = beer and is fine. Grain and fruits are good; meat should be eaten sparingly. I interpret “hot drinks” as originally referring to temperature (presumably based on some sort of Thompsonian medicine concept or something), with caffeine eventually becoming a post hoc rationalization. For its time, pretty good advice.

There is a simple reason why Mormons don’t drink coffee: We believe the prophet Joseph Smith received revelation from God commanding the church to follow a specific diet. We believe that God blesses us with health and other spiritual blessings for following this commandment. This is not unusual when you think about it.
