Apologies in advance for posting this request three times -- once each on the Beer, Wine and Spirits boards. I'll be preparing a Low Country boil for the Fourth, also called Frogmore Stew. It's a combination of small red potatoes, Andouille sausage, corn on the cob and shrimp all boiled with lemon and a generous amount of Old Bay seasoning.
Serving is simple too, just drain the boil and pile high where everyone can dig in. Peel, crack, eat and have fun. The low-country boil is simply a combination of potatoes, corn, onion, sausage and seafood (stick to shrimp, crab, lobster, or crayfish).
The sausages and Cajun spices can overwhelm a lot of white wines. I like the acidic whites already recommended, but my first choice (after beer) would be a big, fat Viognier or oaky Chardonnay. And there's always Champagne. Best low country crab boil we had was at The Crab Shack at Chimney Creek outside Savannah on the way to Tybee Island.
