So if you’re looking to whip up a batch of cold brew coffee, here’s how long you should steep it for: Steep cold brew for 18 hours for best results. Since cold brew coffee works through a very slow and steady extraction of the coffee flavor and compounds, the more time you give it, the more flavor you’ll get.

We recommend staying within a range of 12 to 18 hours. We usually steep our cold brew in the refrigerator for 16 hours, which is right in the coffee extraction sweet spot. Never bitter, never weak: this is cold brew as it’s meant to taste. If you’re steeping at room temperature, you may only need about 12 hours.

The optimal steeping time is eighteen hours and is best used if brewing at temperatures below sixty degrees Fahrenheit.

You may be wondering why exactly anyone would recommend such a long steeping time if caffeine levels aren't impacted. The recommendation to allow the cold brew to steep for 18 to 24 hours actually has to do with flavor! Extended steeping times allow for the flavor compounds within the brew to loosen up.

Just like tea, how long you steep cold brew coffee depends on the flavor and taste you’re after. While the ideal time frame for steeping is between 18-20 hours, those who prefer a stronger, bolder taste can steep their cold brew coffee for up to 24 hours.

We recommend letting your cold brew steep for 12 to 18 hours. This is a big range, but keep in mind that it’s a slow process, so the flavor won’t be drastically different at either end of the range. The biggest thing to avoid is brewing for longer than 24 hours, after which your cold brew may be undrinkable and very over-extracted.
